  • 5 pounds red potatoes, thinly sliced or cubed
  • 1 onion, finely chopped
  • 6 slices bacon, chopped
  • ½ cup butter, diced – Salt and pepper to taste


1. Preheat oven to 400 degrees F (200 degrees C). Grease a 9×13 inch casserole dish.

2. Place potatoes in an even layer in the greased dish. Sprinkle onion and bacon over potatoes, then dot with butter. Cover the dish with foil.

3. Bake in the preheated oven for 45 minutes. Remove the foil and stir the potatoes. Turn the oven to the broiler setting and allow the potatoes to brown for approximately 5 minutes, until crispy. You may need to stir every minute or so to achieve even browning. Serve immediately.
