Ingredients:

  • 2 Boneless skinless chicken breasts
  • 4 tablespoons cream cheese
  • 1/4 cup Pepperjack cheese, shredded
  • 2 tablespoons green onion, chopped
  • 4 to 8 pieces of bacon

Directions:

1 Cut chicken into 4 equal-sized pieces. Pound breasts to about 1/4″ thickness.
2 Mix softened cream cheese, chopped green onions, and shredded pepperjack cheese. Place 1/4 of this mixture into the middle of each piece of chicken.
3 Roll the chicken breast up, keeping the cheese mixture in the middle.
4 Wrap 1 to 2 slices of bacon around the chicken breast, secure with a toothpick if needed.
5 One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.
6 Place on a baking sheet and bake for 30 minutes at 375 degrees F.
7 Broil the topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.

FAQS

Can I use other cheeses in this recipe?

Absolutely! Experiment with your favorite cheeses to customize the flavors. Sharp cheddar, mozzarella, or even a smoky gouda can add a unique twist.

Can I make this dish ahead of time?

While it’s best enjoyed fresh, you can partially prepare it in advance. Assemble the rolls, refrigerate, and bake when ready. Adjust the cooking time accordingly.

How do I ensure the bacon is crispy?

For crispy bacon, consider using thin slices and ensure it wraps tightly around the chicken. If needed, broil for an extra minute on each side for that perfect crispiness.
